The start of the week is the perfect time to set intentions for our schedules and how we nourish ourselves and the planet. What we choose to set on our plates has far-reaching impacts on the environment. Monday’s Mindful Meals will remind us to make conscious choices that reflect sustainability and personal-well-being.

Why Our Food Choices Matter 

Our diets play a significant role in the health of the planet. Meat production accounts for a substantial share of greenhouse gas emissions, deforestation, and water use.  One pound of beef needs approximately 1,800 gallons of water! Plant-based meals utilize sustainable agricultural methods to reduce water and soil erosion that degrades the earth and generally require fewer resources, therefore reducing our carbon footprint. However, there are disadvantages to going vegan. Being on this diet usually requires more intake of soy and almonds, which are two ingredients that with them bring a high ecological footprint as they require mass amounts of transportation to reach their desired location.

Approaches to Mindful Eating

Incorporate a plant-based meal 

Combine plant-centered options such as zucchini salad, lentil soup, and chickpea curry to your daily meals.

Purchase local, seasonal produce 

Choosing fruits and vegetables that are in season and local to you reduces the environmental costs associated with long-distance travel.

Reduce food waste

Plan portions carefully, repurpose leftovers, and store food properly to extend its freshness.

Decrease meat consumption

Livestock production has detrimental impacts on the atmosphere by rapidly releasing more methane than any other source. Less demand for meat means less air and water pollution.

A Challenge for Today

For today, aim to eat at least one plant-based, low-waste meal. Reflect on how your current meals connect to broader environmental issues.
